How to make Manglore style chicken ghee roast

Mangalore Style Chicken Ghee Roast is a popular restaurant-style dish, but it’s simple and you can make it at home. It is delicious with complex flavors. Ghee gives excellent flavor to this recipe. Chicken Ghee Roast is made from dry roasted spices and then added to a smooth paste. The chicken is cooked in masala and a generous amount of ghee is added. Ingredients

1 kg chicken (cut into small pieces)
Curd – 1/2 cup
Salt – to taste
Turmeric – 1/4 tsp
Kashmiri Dry Chilli – 6
Black pepper – 8
Coriander seeds – 2 tsp
Cumin – 1/2 teaspoon
Fennel seeds – 2 teaspoons
Garlic cloves
Chopped ginger – 1 tsp
Lemon juice or tamarind pulp – 2 tsp
Ghee – 3 teaspoons
Chopped onion – 1/2 cup
Jaggery – 1 teaspoon

Method: Chicken Ghee Roast should be started by marinating the chicken. First, in a large bowl, add chicken, turmeric powder, salt and mix well. Add curd and mix well. Keep aside for 15 minutes. On the other hand, add red chillies, cloves, pepper, coriander seeds, cumin seeds to the pan. Toss for a minute. Then mix with garlic, ginger, lemon juice and some water. Grind and make a fine paste.

Heat 1 tablespoon ghee in a pan. Add the chicken and fry for 5 to 8 minutes until the chicken is half cooked. Remove and keep aside. Now pour desi ghee, chopped onions in a fresh pan and saute for 2 minutes. Add chillies and masala paste to the same pan. Add salt as required, few curry leaves and fry for 4 to 5 minutes till the oil separates. Add the tamarind pulp and fry for another minute. Add chicken again and mix well. Continue frying for about 10 minutes and add powdered jaggery and mix well. Taste for salt and adjust if less.

The chicken should now be fully cooked and coated with a thick layer of masala. You will also see the ghee floating along with the masala. Garnish with curry leaves or coriander leaves and serve hot. Tips for making the best chicken ghee roast

Grind the masala until very smooth. Saute the spices on low heat. Otherwise it may burn and become bitter. Use bone-in chicken for best flavor. Cook the entire dish in ghee. Cook the chicken slowly in low and low spices so that it becomes tender. If you have whole kashmiri chillies and whole coriander seeds use them while roasting.
